The princess has finally started her swimming classes after two years of coaxing. After each class, she will be so hungry and couldn't wait any longer to travel to the nearest food venue. So Mummy always has a bottle of hot milo and snacks prepared for her to curb her hunger pangs.
So I made this super easy Double Chocolate Banana Muffins for her and her friends at swim class. Almost all the kids I know love chocolates! So this muffins confirm won't go wrong. Combined that with bananas, the aroma is so inviting till you want to sink your teeth into these sinful snack immediately. And it certainly didn't disappoint me. The chocolaty taste with a hint of banana will have you gobble the muffin with joy. That's why people say chocolate will make you happy!

The ingredients (makes 12 muffins)
- 2 large or 3 medium bananas, mashed
- 80 ml oil (I used canola oil)
- 1 egg
- 200g sugar (I used 150g only)
- 188g plain flour
- 30g cocoa powder
- 1 tsp baking soda
- 1/4 tsp baking powder
- 180g mini chocolate chips
- Sugar for sprinkling on top (I didn't do this step)
The steps are super easy and there is no need to use the mixer! Yeah ~~~ Less things to wash. Just measure the ingredients and pour everything together and Viola!
But do remember to preheat your oven first as there are only a few steps involved. So you will finish quickly and you do want your oven to be ready by then.
Instructions
- Preheat oven to 175C
- In a large bowl, whisk together the mashed bananas, oil and egg
- Add the flour, baking powder, baking soda, cocoa powder and sugar
- Using a wooden spoon or spatula, stir the mixture until the flour is just incorporated
- Add the mini chocolate chips and mix to combine. Do not over mix!
- Spoon the mixture evenly into a 12-hole muffin pan - you can choose to line the tray with muffin holders or grease it
- Bake at 175C for 20-25 minutes
- Cool in the pan for 15 minutes before transferring onto a wire rack to cool completely

I'm surprised how moist these muffins were! But I do find the banana taste too mild. Maybe I shall add more bananas the next time I bake this again. For now, the chocolates are enough to make me and my family happy.
